Courgette & sweet potato soup
2 small sweet potatoes
1 small onion
1 1/2 pints of bone broth stock
3 courgettes, varying colours
1 tsp fresh sage
Cut all the vegetables the same size and add to pan of bone broth stock.
bring to boil then simmer for 10 mins.
Blend and serve.
- 1 tsp fresh sage leaves
- 1 bayleaf
- 1.5 pints bone broth stock
- 3 small courgettes of various colours
- 2 small sweet potatoes
- 1 small red onion
cut the courgettes, onion, sweet potatoes all the same size.
add to pan of stock with the bayleaf and sage.
bring to boil then simmer for 10-15 mins.
